This month I’d like to showcase a conversation between Peter Byck and Dr Allen Williams, which attempts to shed some light on the myths and truths about red meat. Please watch the video towards the bottom of this blog post.
Who is Dr Allen Williams?
Allen is a scientist, researcher and 6th generation farmer who has worked all his life in the agricultural industry. He is a partner in the businesses Understanding Ag LLC, the Soil Health Academy and Regenified LLC. He has consulted with thousands of farmers and ranchers all over the US and around the world.
He is a “recovering academic”, having served 15 years on the faculty at Louisiana Tech University and Mississippi State University. He holds a B.S and M.S in Animal Science from Clemson University and a Ph.D. in Genetics & Physiology from LSU. He has authored more than 400 scientific and popular press articles, and is an invited speaker at regional, national and international conferences and symposia.
Who is Peter Byck?
Peter is a professor of practice at the Arizona State University, in both the School of Sustainability and the Walter Cronkite School of Journalism, where he teaches students to make short documentary films about sustainability solutions. He is the director, producer and writer of Carbon Nation, a documentary film about climate change solutions. In 2020, Byck completed “Carbon Cowboys” a 10-part documentary short film series focused on regenerative grazing. His most recent work is the docuseries “Roots So Deep, You can See the Devil Down There” about adaptive multi-paddock grazing systems.
In the short interview of about 18mins (see the below video), Peter and Allan discuss why beef should be on the menu, and in particular the way beef should be raised for it to become a health food.
At Shingle Hut Creek Farm we are on this journey of regenerative farming, to create health creating food for our family and our customers.
